Today, I ventured to Wegman's for a breakfast food run. Last week, I discovered a box of Honey Nut Chex that were GLUTEN-FREE. I'm now addicted, and so I went back to get another box or two. When I walked down the cereal aisle (something still very foreign to me), I saw the gluten-free boxes of Rice Chex, and sitting right in front of them was......
A GLUTEN-FREE BOX OF CORN CHEX!
I bought two boxes of gluten-free Corn Chex at the grocery store today!!!!!!!!!!!! There was lots of excitement, many smiles, and even a few tears of gratitude on my drive home from the grocery store. I only got home 15 minutes ago, but I've already eaten some. On my first bite, so many memories came back from childhood. You, my blog readers of today, have no idea how significant this is. As a kid, I would eat corn chex for breakfast, take a baggy for lunch, eat it as an afternoon snack, and in college sometimes eat it for dinner. It didn't matter what time of the day, I was always up for Corn Chex. In fact, when I was having so many allergy issues in late middle school and early high school, my mom got me tested for a corn allergy, since everything I loved involved corn (corn chex, popcorn, etc.). I was so angry with her, because I couldn't imagine never eating corn chex again, I didn't want to find out I was allergic to them! But then, I did find out I was, just not for the corn.
The fact that this happened today, after Thursday getting sick from going out to dinner at Diamonds, the Indian restaurant in town, and then taking my own dinner to the Vietnamese restaurant for book group because I was so scared to get gluten-ed again the next day, this is just such a relief today. It's symbol - more and more of the world care that there are some of us that just can't eat the little additives that people like to put in food. There might be a day that I can even buy a can of soup that costs less than $4! Wouldn't that be amazing?! So today, while eating my first Corn Chex after over four and a half years, this is one small step for General Mills, one large step for celiacs everywhere!!!
